Russia – Russian roasted potatoes

Russian Roasted Potatoes

Since a main dish is a little lonely on a plate without a side dish, we stumbled upon Russian Roasted Potatoes, which to no surprise are potatoes that are roasted. Who would have thought? It is a really simple dish that will not take you a lot of time or effort to make and is very tasty on top of it! And it goes very well with our Shashlyk skewers!

The ingredients are:

  • 1 lb potatoes
  • 1 small onion
  • oil
  • salt

The original also has some mushrooms with the mix, but since I can’t stand those things, we decided to scrap them. So we cut potatoes into strips (kind of like French fries) and start frying them up in a bit of oil in a medium sized pan. Normally we have Nico help with the cutting, but since he is not big on the strips, but rather on fine chopping and mangling, he had to sit this one out.

I put the heat a little higher than normal, because the potatoes are supposed to be a bit crunchy on the outside and soft on the inside, so even if you get a nice sear, it still works. Once the potatoes were soft and broke apart when poking them, I put the onions (they say to cut them into strips, too, but which onion you know will stay a strip?) on top and put the lid on, so they could cook a little.

Once the potatoes were due to be stirred again, we mixed the onions in as well, so that they could also get a little sear and get a bit of caramelization going, Nico was right there, since stirring is one of his favourites :)

While the potatoes were doing their thing, we grilled the shashlyk skewers and it didn’t take long until we had a very tasty dinner! While Nico did not want to try the meat, he loved the potatoes :)
