Boo-ffins & Muff-kins!
This morning I made french vanilla muffins with Nico, my mix was about to expire so I had to use it. Nico doesn’t like icing and is iffy on anything but chocolate flavor, but if add chocolate chips he’ll eat it. I measured and he poured everything, while mixing with Nico I thought about the season, Halloween and that I hadn’t made much for it.
The white mix inspired me to make little ghost faces, we originally put chocolate chips on top before baking, but my mix was too wet and they sunk, so when they came out I stuck the chips back on top and they stuck since it was hot. For the second batch I used the little icing pen, put a dot and pressed them on after they were cold. So we had ghosts!
I also had some left over orange sugar (sugar with a few drops of orange food coloring) and sugar eyes, I used those and chocolate chips to make the face. I sprinkled the orange sugar on top once it was cold or the sugar would have melted. I used a green icing pen and drew two leaves on top of the pumpkin head and voilà
Another healthier alternative would be to use dry raisins instead of chocolate chips
Nico liked them and we will deliver them to Alex’s office when we go pick him up tonight.

Too bad I missed these for Halloween, but do you have the recipe for the muffins?
Danielle, it’s just a white cake from a box, nothing fancy.
