(February 4, 2014) Where is our Peruvian bread, you ask? Well, we did find a few that looked interesting, such as the Pan de Chancay or the Pan de Papa, but if you have a four year old with the attention span of a bumblebee, breads that have to rest for an hour or three here or double in size there are just…not…happening! Heck, his attention span is so short that even a cold lasts less than a day!
So then when you find a recipe that is interesting, but you don’t have all it asks for, what do you do? Exactly, you go Ticia from Adventures in Mommydom and improvise! Well, you substitute, improvisation can lead to some, eh, somewhat interesting results, lol. Our recipe of choice was the famous arroz con pollo (or rice with chicken), but since we did not have any chicken, but copious amounts of ground beef, we went for an arroz con carne instead. Also one pretty big ingredient was left out – cilantro. Neither of us like it, but I actually read somewhere that you are genetically predisposed, if you taste it as citrusy and bright or grossly like soap!
While I was chopping the onions to brown them together with the ground beef, Nico chopped up the green peppers that would be one big parts of the for the liquid that in the end would cook the minute rice, one of his favourites. While the beef and onions were browning we whipped out the Magic Bullet, put the peppers, garlic, Worcestershire sauce and orange juice in and Nico went to town, turning it into a somewhat odd smelling smoothie.
Nico, as per his almost usual, did not try the rice, while we were very surprised about how light the taste was compared to how strong the pepper mixture had smelled. All in all it was not a bad dish, but it was not one for the best of recipe collection…
And here is our recipe for you:
- 500 g extra lean ground beef
- 1 onion, finely chopped
- ½ cup green bell pepper, coarsely chopped
- 4 cloves garlic
- ½ cup orange juice
- 1 tbsp Worcestershire sauce
- 2½ cups uncooked white rice
- 3½ cups chicken broth
- ¾ cups frozen peas
- ¾ cups frozen corn
- Brown ground beef and onions.
- Blend green pepper, garlic, Worcestershire sauce and orange juice until smooth.
- Add juice mix, rice, broth, peas and corn to beef mixture.
- Let simmer on medium heat until liquid has evaporated, stirring occasionally to avoid sticking.
